Full Day Hands on Thai Cooking Classes

The following all day authentic Thai Cookery lessons, cover the basic technique in Thai cooking. You'll learn how to make soup, appetizers, salads, curries, Thai bbq, steam fish, deep fry fish, stir fry noodles and fried rice and all the necessary technique in Thai cooking

During the lesson, you have to cut, chop, pound and cook with raw herbs, spices and Thai seasoning ingredients. After the lesson, you definitely won't find difficulty when you go to shop in Asian stores. It's because you've to touch everything with your own hand. We'll never give you a bowl of commercial prepared or ready-pound curry paste. You've to start with the raw ingredients

Class size: Minimum 2 to maximum 4 people in each class. Availability is by first come first serve. Last minimum application won't be accepted.

Class schedule for Lesson A to D: From 10:30am to 5:00pm.

Thai cookery classes are mainly scheduled on Saturday and Sunday. However, if there're FOUR people in your group, we can try to arrange a private class for your group on weekday.

You can start from any lesson. The sequence of the lessons does not indicate the level of difficulty.

Lesson A:
1. Grilled chicken on Bamboo Skewer marinated with Panaeng Curry (Practical)
*You will prepare this special type of Thai BBQ with herbs and various spices. You can either grill it on open flame or in an oven. You can use the same formula for grilling beef, pork or lamb. You will learn how to prepare this curry paste from raw ingredient using mortar and pestle.

2. Tom Yam Koong/Hot and sour shrimp soup(Demonstration)
*You'll learn how to prepare this authentic Thai clear soup which is different from the common red milky soup with red oil on top. You'll be surprised by how quick it can be prepared, and how refreshing it'll be. The fresh aroma from the herbs and shrimp is more outstanding in this clear soup if it's properly prepared. You'll also know how to turn this clear soup to the commercial red milky version within minutes.

3. Phad Thai with shrimp(Practical)
*With palm sugar and fish sauce, you will learn how to prepare a Phad Thai sauce, which will stay runny even when you freeze it. So you can have Phad Thai when ever you want to.

4. Crispy fish with Thai basil and three flavor sauce (Demonstration)
*You'll learn the basic technique in handling different ingredients when you prepare deep fried dish. You'll learn how to make crispy leaves within seconds. You can prepare crispy chili for garnishing. You will learn how to deep fry a whole fish which the skin is crispy, intact and not greasy at all. You'll learn to prepare the famous 3-flavour sauce which you can use for cooking with other ingredients. Students have to participate in the preparation work.

Lesson B:
1. Yam Wen Sen/Hot and sour vermicelli and shrimp salad (Practical)
*You'll learn the proper way to cook glass noodles, prepare crispy shallot for garnish and the salad dressing which you can also use for different type of seafood salad, such as squid salad. Students have to participate in the preparation work.

2. Green Papaya Salad (Practical)
*You will learn how to prepare the papaya salad dressing from tamarind and palm sugar. You can keep this dressing in refrigerator, so you can have papaya salad whenever you want to. You can also use this dressing for cabbage and carrot salad, if you don't have green papaya in your area

3. Seafood and vegetables fried rice with special shrimp paste (Practical)
*You just have to learn one fried rice dish, then you can use the technique to cook any Thai fried rice recipes.

4. Special shrimp spring rolls with water chestnut and Thai herbs served with homemade sweet chili dipping sauce (Practical)
*You will learn how to prepare these fancy spring rolls, so that they'll taste much better than you can get in restaurants. You'll also learn how to cook the special dipping sauce for the spring rolls.

Lesson C:
1. Crispy shrimp cake with homemade sweet chili dipping sauce (Practical)
*You'll learn how to prepare springy shrimp meat for stuffing, steaming or stir fry.

2. Hot and sour chicken and mushroom soup with Thai herbs and tamarind juice(Demonstration)
*You can substitute with prawns or seafood and serve it with rice noodle.

3. Deep fried fish cake with string bean and homemade sweet chili & peanut dipping sauce (Practical)
*You will learn how to prepare springy fish meat which is not fishy and greasy after deep fry. You will also learn how to prepare the red curry paste from raw ingredient required for making this fish cake, which is the base for most of the red curry

4. Fried rice with minced pork and holy basil(Practical)
*This is another special Thai fried rice which you can easily cook at home.

Lesson D:
1. Green Chicken Curry (Practical)
*You'll use different types of Thai herbs, spices and vegetables. In this recipe, you'll learn how to prepare curry paste in a PROPER way with help of electric appliance. Sequence of adding ingredient is very important. You'll learn the correct way to stir fry the curry paste to bring out the maximum aroma and flavor from the raw ingredients.

2. Tom Ka Gai/Chicken and galengal in coconut milk soup (Demonstration)
*This is a soup that you can cook quickly for a quick meal. It should have the right balance between the sweet coconut flavor from the coconut milk and the fresh Thai herb fragrance.

3. Steam fish with fresh mint and spicy lime sauce (Demonstration)
*This is a very refreshing fish recipe, which you can prepare within minutes.

4. Egg fried rice with minced pork, black olives and corianders(Practical)
*Another Thai fried rice dish good for daily consumption.

1. The ending time for each cooking session may vary with the number of students in the class.
